Nothing rehearsed — just the same steps our kitchen team follows every day, done the traditional way.

Scrape Fresh Coconut

Split and scrape a fresh coconut by hand using a traditional coconut scraper — the first step behind almost everything on our menu.

Grind Sambol on Stone

Grind scraped coconut, chilli, lime and shallots into coconut sambol on a traditional grinding stone (miris gala) — no blender, just elbow grease.

Tend the Clay-Pot Fire

Help stoke the wood fire and simmer a curry the way it's always been done here — in a clay pot, over an open flame.
